Click on your management tab. Click on Management. This will default to people so switch to buildings. Switch to buildings and select the woodshed. Tab over to the production tab (hammer with a small partial circle with an arrow on it) Tab over to the production tab. Increase the % of what you want the person to produce.Like how do I assign them it? I got a barn with scythe, seeds, hoe and bag in the chest, but again how do I make them farm? Do I need a new fresh field that I map out or something? Press N to go to the management tab and assign them where you want them.

Word of advice: do NOT get too many villagers early on. Villagers are a liability until their skills improve. You're going to have to pick up the slack (preparing meals, making tools) until they've skilled a bit.
